How to save money by batch cooking?

Cook in quantity. Don’t just cook to individual orders; cook in large amounts. Make tons of pasta and plenty of sauce, bake loaves of garlic bread, cut them into smaller pieces, prepare tons of salad, and place a few different dressings in plastic carafes for people to use.

If there’s a grill, pork is the cheapest, but chicken drumsticks, hot dogs, and hamburgers/cheeseburgers can also be sold.  If you want to go on a lower budget, make pork cubes next to pearl onions, cut bell peppers, and put some semi-sweet sausage (1 pkg of 6) on there, too. You can also feed 6–10 people and add extravagantly with white queso, chicken strips and peppers (for fajitas), some cooked tilapia for fish tacos, black beans and/or garbanzo beans, and so on.

How to feed a large group cheaply?

For a large gathering of say 1000 people, the easiest food to make is whatever your caterer wants to provide.  But if you are not a professional cook with the facilities to accommodate that many people, you do not want to try feeding a group like that.

Suppose you made something utterly simple, like chicken broth. Suppose you gave each guest a cup, eight ounces, of broth. That’s 125 gallons of broth— probably the biggest pot in your kitchen holds just a few quarts.

  1. Set it up so guests can do as much work as possible without ruining the point. You gotta gamify this a bit. Like, don’t make a bunch of burgers! Cook a bunch of burgers, provide them with buns & toppings, and let them assemble. The problem here is it’s hard to determine how much of what you need. Generally, I suggest 10–15% extra on everything. Less work, more usage.
  2. Cook as much as you can well in advance. Pasta should be cooked chilled, oiled & portioned, fish should be placed in hotel pans with seasoning and water ready for the oven. Etc.
  3. Have a clearly defined plan of service that EVERYONE involved knows. The less confusion involved, the less room for mishap.
